Carruan Beef
All our beef is matured on the bone to
make sure that when it is cooked, it is succulent, tasty and tender. The
forequarter (mince, chuck steak, brisket) is matured for a minimum of 2
weeks and the hindquarter (steaks, roasting joints) for a minimum of 3
weeks.
The majority of the beef is from our own
herd of South Devon x Red Angus cows sired by a Limousin bull. They are fed on
good Cornish grass and our home-grown cereals with a small amount of protein
bought in from GM free sources. Occasionally to keep up with demand we buy in
extra beef from neighbouring farms who we know produce the same quality of beef
and adhere to the same high standards of animal welfare as we do.
Carruan Lamb
All our lamb is matured on the bone
for a minimum of 1 week so that when it is cooked it is always succulent, tasty
and tender.
The majority of the lamb is from our own flock of 1000
pedigree Poll Dorset ewes. This is a unique breed that will lamb at any time of
the year. We lamb some in November and some in February to make sure that we
have fresh lamb available all year. The mild Cornish winters mean that the
grass grows for most of the year so even lambs born out of season in November
can be reared naturally to produce the first Spring lamb in the country.
Not all of our lambs are sold through our farm shop or by
mail order. We are delighted to be one of about 80 farmers who supply
specialist Dorset Lamb on contract to Waitrose. Look out for Dorset Lamb on
their butchery counters from February to May, and their English lamb for the
rest of the season.
Our lambs are fed on grass, home-grown
cereals and some protein bought in from GM-free sources. They are only housed
for a few weeks before and after lambing. Occasionally to keep up with demand
we buy in extra lamb from neighbouring farms who we know produce the same
quality of lamb and adhere to the same high standards of animal welfare as we
do.
Welfare & Quality Standards
Our farm, and any farms that supply us
are members of a farm assurance scheme called
FABBL (Farm Assured British
Beef & Lamb). Farms are inspected regularly to ensure that health & welfare
standards are maintained and that any medicines are used responsibly. For more

To ensure the quality of our meat we are
registered with the Beef and Lamb Quality Standard. The Quality Standard Mark
for beef and lamb is a new scheme that provides you with high levels of
assurance about the meat you buy. For more information visit

It is the only scheme in the UK to cover eating quality. All beef and lamb
carrying the mark is chosen according to a strict selection process to ensure it
is succulent and tender. Quality Standard beef and lamb is produced to higher
standards than required by law with a supply chain which is fully assured and
independently inspected at every stage from farm to meat counter.
Packaging & Delivery
All the meat is vacuum packed and
weighed as individual cuts. It is then packed in a polystyrene box and kept
cool with an ice pack. We send it to you on next day delivery before 12 noon to
make sure that it reaches you in excellent condition.
